Simple Pasta Salad

If it's Monday evening and you've had no time for food prepping on the weekend, don't panic! Today's recipe is one of those super simple and easy to prepare meals that represent the perfect balance between comfort and health. I am talking about a pasta salad with veggies, tempeh and a spinach-cashew dressing. It takes less than 30 minutes to prepare, so roll up your sleeves before your loved ones get back home!



YIELD: makes 2 portions


For the dressing

  • 2 cups of fresh spinach

  • 1/4 cup of cashews

  • 1/4 cup of water

  • Salt and black pepper to taste

  • 1/2 tsp of garlic powder

  • 1/8 tsp of nutmeg

  • The juice of 1/2 lime

For the salad

  • 200-250g gluten-free penne pasta (I used brown rice one)

  • 1/2 medium sized onion

  • 1/2 red bell pepper

  • 1/2 yellow bell pepper

  • 10 cherry tomatoes

  • 200g flavored tempeh (I used curry flavored one)

  • 10-20 pitted olives

For the garnish

  • Fresh parsley

  • Dulse


  1. Start by blending the cashews, spinach and water in a food processor or high speed blender. You're looking for a smooth and creamy consistency. Once achieved, season with the lime juice, garlic powder, nut meg, salt and pepper.

  2. Continue by boiling your pasta according to the package's instructions. Don't forget to add a pinch of salt to the water.

  3. While the penne is cooking, start preparing the vegetables. Mince the onions, followed by dicing both the red and yellow bell pepper. Cut the cherry tomatoes into quarters.

  4. Cut the tempeh into cubes and cook it in a non-stick pan for a couple of minutes on both sides.

  5. Add the drained pasta to a bowl, along with the dressing, onions, bell pepper, tempeh, tomatoes and pitted olives. Mix well.

  6. Sprinkle with some dulse and chopped fresh parsley. If needed, sprinkle some more salt and pepper.

  7. Enjoy!
