Caramelized Apple & Almond Butter Pancakes

Pancakes, anyone? I don't know about you, but if I have to picture the perfect Sunday, I will most definitely think of pancakes for breakfast or even brunch. They are easy to prepare and you can make them both savory and sweet. And the best thing is that everybody loves pancakes, so you can't go wrong with them. Today, I am sharing with you a vegan, gluten-free and free of processed oils pancake recipe that combines one of my favorite flavors: almond butter, apple and cinnamon. So roll up your sleeves and let's get going!



YIELD: makes 5 pancakes


For the pancakes

  • 1 cup of gluten-free flour mix (the one I used combines buckwheat, quinoa, brown rice and millet flours, as well as guar gum and corn starch)

  • 2 cups of nut milk (I used gluten-free oat milk)

  • 1 tsp of baking powder (I used wine stone baking powder)

  • Pinch of salt

For the toppings

  • 1 apple

  • 4 tbsp of maple syrup

  • 1/4 tsp of cinnamon

  • Vanilla bean powder

  • Almond butter

  • Extra maple syrup or coconut flower nectar (optional)

  • Hemp seeds (optional)


  1. In a bowl and with the help of a hand mixer, combine all of the ingredients for the pancakes into a runny pancake batter.

  2. Heat up a pan on medium heat for a couple of minutes. I used a nonstick stainless steel pan, which allowed me to use no oil when making the pancakes.

  3. For one pancake pour around 1/2 cup of the batter into the pan. To achieve a perfect round form, you can use a pancake ring. I didn't have one, so I used a cake ring instead (15,5 cm diameter). Pour the batter into the middle of the ring and wait until it spreads almost to the borders, then remove the ring and cook until bubbles have popped and there are holes in the batter (30-45 seconds). Turn onto the other side and cook for another 30-45 seconds. Repeat the step until you run out of batter.

  4. For the caramelized apple, cut one apple into slices and add to a pan preheated on medium heat. Pour over the maple syrup and sprinkle the cinnamon. Mix gently and let the apple slices soften up and get a nice brown color (takes a couple of minutes). Get off the heat.

  5. Arrange by spreading almond butter on top of each pancake, followed by some slices of caramelized apple. Sprinkle vanilla bean powder and hemp seeds on top. If you wish, drizzle some extra maple syrup or coconut flower nectar over the pancakes as well.

  6. Voilà! Enjoy with a cup of tea, coffee or hot chocolate!
